Catalogue Processing/Data Entry

Hello, I am looking at developing a comprehensive product price list, I need all the data to be in one format so that it can be used on the web and be compatible with various programs. There are approximately 10 fields for each product as per the attachment (Required Product Fields). In addition the products have to be sorted in to various categories and sub categories; accurately assigning categories and sub categories is the most essential part of the project, please see the attachment for the full list of product categories and sub categories. The total number of products exceeds 25,000, so it is a fairly large project. The products are related to the hotelware industry e.g. Bed Linen, Bath Linen, Kitchen Utensils, Barware, etc. My biggest is concern is how you will go about assigning categories and sub categories to the products as this will be a very difficult task. You will see from the second attachment that the sub categories are very specific.
