I have a couple of established VPN tunnel to my servers via a cisco asa device, I would like to remove these devices and establish the tunnel directly to the server via IPSEC firewall.

Do you have a server with Linux? If yes then for site-to-site ipsec you need to use libreswan. If IKE2 is required then it is better to use strongswan.
