This should be a rather simple modification to the third screenshot you provided. Assuming that we can run aggregates and there are no constraints in 3Dcart, it should take all of 1 hour to complete. I've been working in ETL/BI for a decade on massive US Government Healthcare data, so one way or another we can get you the list you need. Also, as an aside, my wife and I just visited Canada for the first time back in May and we absolutely fell in love with it! Will you need ongoing support from time to time?
