Would most likely finish the job in 2 days, just taking the extra day as a precaution. I do not have any prior experience with cs-cart per se but I do have plenty of experience with data migration, shopping cart solutions, CMS systems and obviously with PHP and MySQL. So I do not expect any issues. I would like to know whether your environment supports any other scripting languages since it's obviously not necessary to migrate the images using cs-cart functionality.
