Create filter within Shopify Project

I'd like to add Shopify filters to my theme... Not only that, but I'd like for them to be customized. When I activated my Shopify filters through my theme, they were showing up, but they were pretty much useless due to the fact that all of the different tags were nested under one section. I'd like to manually control the sections and filters so sizing, pricing, tea type, flavor, and more can easily be sorted through. Is it possible to get this done with custom code and without the use of a 3rd party app? If this needs to be updated, will it be possible for someone who doesn't know code?
