Hello I have experience with bootloader for STM32F407. I can provide 100% fail-save solution. You can: a) use solution you proposed b) have one FW for upgrade (can not be erased/modified) and one FW for normal run. The STM always boots to the "first FW". The MCU/user can switch the MCU to the "normal FW". I have already some solution with Windows GUI control application (in my solution RS232 is used for communication). The price is negotiable.
