contact form - with email recipient option

I would like a contact form with a drop down menu that enables the user to select the name of the person that it is emailed to - but the associated email addresses must be hidden from spam bots (and not just appear in the code of the page unless they are properly disguised ) I would also like to be able to go to the file where the email addresses are stored and change them from time to time when I need to.
