Test and upgrade WordPress sites, including the current WP version and PHP 7

I have two high-volume commercial websites that are running WP 4.9 and customized commercial themes (both desktop and mobile). I want to upgrade to the current versions of WordPress and plugins and also move to PHP 7. This would be done on my dedicated LiquidWeb server where the sites are running. I need to be able to test everything before the changes are brought live, so this will require copying the sites, applying the changes, letting me test to find any problems and fixing them, and then moving the changes live. This will also involve upgrading my very slightly customized Revive Adserver v. 4.0.0 to 4.2 under PHP 7 while keeping the customizations. If we have problems with this, I can probably get someone with Revive experience to help. I also have one more old FAQ script that needs testing under PHP 7, but if it won't work, then I'll either leave it running under old PHP or replace it. I need someone with experience doing this who speaks good English since we will need to coordinate everything as I'm testing and reporting issues. I'm happy to pay hourly rather than a fixed bid since the scope of the work is a little bit uncertain. I'm more interested in quality and thoroughness than the lowest bid. I will post as a standard hourly project, but message me with any questions or suggestions. Again, the WordPress installations and adserver are for high-volume, commercial sites that can't have much downtime, so I am interested in hearing how you would propose we do this from your experience.
